Cultural immersion in a study abroad program as a form of culinary tourism

Abstract
Culinary tourism can be defined as an activity in which individuals experience different cultures through their foodways (food traditions). The presenters will share their experiences in a culinary tourism cultural immersion program in a small rural village of the Piedmont region of Italy. Through experiencing local food and food traditions students develop a greater understanding of, and sensitivity to a foreign culture. In a problem-based interactive workshop the presenters and participants will explore learning strategies and assessment models to develop similar study abroad experiences.
